Letting the roast sit uncovered at room temperature for 1-2 hours before roasting will give your dinner that awesome crispy exterior you’ve been looking for. Preheat the oven to 450 degrees then rub oil, garlic cloves into all sides of meaty pieces (don’t forget about those yummy herbs!) 

Put in a pan fitted with an aluminum foil covered rack and place it on top of two burners where there’s enough space between them so they don’t touch each other or bottom element; sear both sides until browned evenly without burning–about 15 minutes total cooking time including resting after removing from heat source but not during hydrating phase). Next reduce heat back down again 325 degrees. Remove from the oven and let it cool for 30 minutes.
